Throughout the year, we only use ingredients shipped directly from Tsukumi, Oita Prefecture.This is our pride and joy, yellowtail, with outstanding fat content and sweet meat.
Please try our yellowtail shabu-shabu, where high-quality yellowtail fillets, which are delicious even when eaten raw, are lightly cooked to remove excess fat and bring out the flavor and sweetness even more.
The dipping sauce is an original, homemade kabosu ponzu sauce.And add yuzu pepper as a condiment.
In addition, a special soup stock developed in-house using flying fish stock (a type of fish) unique to Kyushu and dried shiitake mushrooms further enhances the flavor of yellowtail, vegetables, tofu, and other ingredients.Enjoy the final dish of udon noodles as well.
